Shepherd’s Pie
(gluten free, contains Dairy)

Crust on top

3 cups of prepared mashed potatoes
1 egg

Filling

3 lbs lean ground beef
½ cup chopped onion
1 cup mushrooms sliced
1 cup sour cream
½ cup catsup
2 T prepared mustard
1 tsp salt
½ tsp pepper
1 package frozen corn

Heat Oven to 400 deg. Grease a large glass rectangular pyrex pan. In a large bowl, stir together mashed potatoes and egg, mix well. Reserve ½ cup of mixture. In large skillet, over medium high heat, cook ground beef, onion and mushrooms, just until meat is no longer pink. Drain. In same skillet, stir in reserved ½ cup of potatoes and all remaining filling ingredients. Spoon into prepared pan. Top with remaining mashed potato mixture. Bake at 400 deg for 35-40 minutes or until hot in center. Cool for 10 minutes. Serves 10-12.
